Dear Readers,

I have read two great books one is “Small People with Wings”

Its about a girl that is teased about one day in Kindergarten that she still gets teased about in 7th grade. She moves to an Inn that belonged to her rude grandfather who mysteriously dies and a family heritage moon ring falls in the hands of her quirky artist parents. It is a Mystery that keeps you locked in like you are under  spell.

The other book is “Cupcake Diaries”:

It is about four kind girls in middle school who love to bake. I am almost done with the Second book and am looking for the Third.

Dear Readers,

Spring is almost here! All new veggies and fruit to work with, too.

There is a pie contest soon and I can’t wait. I love to make pies. There are fruit pies, veggie pies, custard pies, and cream pies. All put into either savory or sweet categories and maybe even both. I will be making a punch of tarts and pies for this lovely season. Don’t forget to do lots of biking and exercise for the summer.

Dear Readers,

Two awesome books that I have read lately are Pie and Close to Famous. A fabulous read for any young foodie out there. I personaly can’t really find interesting food books like these. To me they are rare. It is a wonderful feeling when I finally find one. These two books are awesome. You should read them!

Movies You Must See January 14, 2012

Dear Readers,

I saw two great movies this December, Hugo and Tin Tin. Tin Tin is a must see animated film. A wonderful attention grabbing action and mystery for everyone in the family to see. I can’t tell you too much. You’ll just have to see it yourself. Five stars. I could see It over and over again.A wonderous movie. The Mystery unfolds into a surprising happy ending. Also a must see of the New Year.

Wong Tongs Wonky January 14, 2012

Dear Readers,

I have been having so much fun with Wong Tong wrappers. You can do so much.

The Wong Tongs that I have made are delicious. Here are two recipes:

Recipe:

Wong Tong wrappers

1 1/2 cup shredded Stewed Meat

2/3 cup shredded mozzerela

1 tablespoon water

(If Wong Tongs get soggy please use) 3 tablespoons flour

To Do:

Mix the meat and mozzerela in a bowl with either your hands (washed of course) or a spatula until it is nicely mixed (not dry). Put that mixture aside and lay out a Wong Tong (more for it to go by faster) on a flour dusted surface, spoon in 1 teaspoon of the mixture in the middle of the Wong Tong, less is more with Wong Tongs so don’t be afraid to put less than 1 teaspoon. Rim the edges of the Wong Tong wrappers with water (spread it with your finger). Fold over the edges of the wrapper, pinch until edges are sealed tight. Fry in a frying pan with grape seed oil, canola oil, or peanut oil.

Recipe:

1 cup Ricotta cheese

1 tablespoon minced basil

1 pinch salt

1 pinch pepper

To Do:

Mix every thing together.

It is the same strategy, but it has to be less than 1 teaspoon of the ricotta mixture in the Wong Tong.

Dictionary moment

Gelato:

Italian Ice cream

From now on I would like to have “Dictionary moments”,  it’s when I explain what a word means.

Well, did you know that gelato has less fat than ice cream? It is rich, thick, flavorful, and DELICIOUS!

You might think I am excagerating ( I think that is how you spell it). Well I am not on my point of view. If you have never tasted it than you are missing out.

My fave gelato is a gelato by Fiorello’s its caramel balsamic. THE best!

 

Pear tarts with homemade cranberry jelly November 14, 2011

Dear Readers,

Do you think I should change the “Dear Readers” to something like “Hello My Cooking Friends”?

Today I made Pear tarts with Homemade cranberry jelly. This is the Recipe.

Homemade cranberry Jelly:

1/2 cup dried Cranberries

2 tsp water, 3 tbsp, 1/2 cup also (later)

2 tbsp butter then 1 more

1 tbsp brown sugar (more if needed)

2 tsp cornstarch, then 2 tsp more

To Do:

Put the cranberries and the water in a saucepan on medium low, when it starts to bubble (slightly) turn down to low and add butter, when the butter is melted add the sugar. Let the mixture simmer at medium low then stir (with a wooden spoon), keep stirring and add water. Put 2 tablespoon of the mixture in a glass bowl and add the corn starch to the mixture in the glass bowl, stir it with a fork. Add the corn starch mixture back to the pan and stir until it becomes glossy then add the 1/2 cup water then stir. Put 3 tablespoons of the mixture in the glass bowl and stir in the  2 tablespoons cornstarch. Add that cornstarch mixture to the pan and stir then let it sit on low until glossy. Put the jelly in a glass jar and cover in plastic rap.

Pear tart:

Puff pastry Shells (store bought or homemade, I used store bought) (you should also have six).

2 red bartlett pears

Sprinkle of light brown sugar for a garnish

To Do:

Roll out Puff Pastry on a floured surface.

Cut the pears in a thin (*but not to thin*) and put in a bowl for later.

1 egg

1 tsp water

Putting it all together:

Set the oven at 350.

Spread the Jelly on the puff pastry and put the pears on it in any kind of design you want. Sprinkle a pinch of the brown sugar on the tart. Mix the egg and water in a small bowl to make egg wash. Spread the egg wash on the sides of the tart to make it golden when it comes out of the oven.  Put the tart in the oven for 25 minutes or until golden.

If you want you can make a creamy topping for another layer of texture and flavor.

1/2 cup cream cheese

1 1/2 tbsp sugar

1/2 tsp vanilla extract

1 tbsp half and half

To Do:

Whip the cream cheese and sugar until light and fluffy. Add vanilla and stir, whip in the half and half.

I got inspired to make this by a commercial on Disney Channel, it was like mine, but she used peach’s not pears and used raspberry jelly not cranberry. I got the idea because my mom wanted me to make something with pears and cranberries because she said that she saw that they go together very well on a TV show. So I put then together and vwola!

 

Peach pockets September 24, 2011

Dear Readers,

Today I made Peach Pockets. You might be wondering what “Peach Pockets” are, well I will tell you my version. A very simple peach pie filling (homemade), any type of puff pastry shells (homemade or store bought, I used store bought), and a whole lot of love.

I put a whole hour into it, but with a lot of practice I could of done it much faster (it is very important to do your dishes as you go, because in the process they tend to pile up). It is easy and awesome.

The reason for not blogging is that I have been going to school and I am totally distracted.

Well it is some kind of toy. I love it because it is cute a it helps me with my pipping skills (which I don’t really have) (I just need to practice).
